Who's ready for summer tomatoes???? I know I am. I remember when I was a kid coming home from camp in the summers and my mom would slice up red juicy tomatoes for me sprinkled with fresh herbs and seasonings and we would enjoy them together. Maybe it’s the nostalgia or maybe it’s the fact that I’m just a summer girl at heart but now I get so excited when tomato season approaches. It signals the start of all things summer:
Over the last few months I have been looking for some easy protein snack and breakfast ideas to have on-hand for busy weekdays. I made an egg cup recipe a long time ago that is delish. However, it is a little bit more labor intensive than I would like these days. It also contains cheese and lately I, very unfortunately, have had to cut dairy out of my diet because it has been upsetting baby girl’s stomach.
So, I wanted an easy egg recipe sans dairy that I could heat up quickly as a breakfast option in the mornings or take with me to work for snacks. This recipe is super simple with just 3-ish ingredients yet packs big flavor, which, if you have been following me, you know I’m all about. I made a batch last week when my dad was coming in town to visit. Both he and my husband loved them and I hope you love them as well!
The other night we made these salmon tacos and I knew I had to post them on my blog. I discovered this recipe a few years ago, actually, and this easy-to-throw-together meal has been a hit in our home and with guests. The four-ingredient slaw is easy to assemble the day before or morning of when you have about 5 minutes. That means when it’s time for dinner all you have to do is mix the 3-ingredient spice rub, (which I loved so much a made a separate post here) mash your avocado, and throw together a side or two, if you want them, while the salmon cooks in the oven. Easy cooking AND easy cleanup!
You guys know by now I love my oatmeal and overnight oats. I’m moving more towards the hot oatmeal these chillier mornings, but I’ve got one more overnight oats recipe for you today. The great thing is that these recipes can be taken out of the fridge in the morning and quickly reheated for a deliciously warm, satisfying and fueling breakfast. The athlete could also take this to practice cold and then eat right after practice cold or heat it up if he/she has access to a microwave. Perfect!
Happy almost Thanksgiving! I hope everyone is staying safe and healthy. Today I wanted to share with you one of my favorite easy homemade soups. It’s warm and savory and packed with nutrition. It’s perfect for this time of year! I love making a batch of this and having it on-hand for lunches and dinners during the week. It has so much flavor, AND it’s one of those recipes where the longer it sits in the fridge, the more flavor it seems to get! You can also freeze this soup to reheat when you want it at a later time!
Hey guys! Today I’m sharing with you a protein AND veggie packed dish that I know will make your weekdays easier. This recipe really isn’t that difficult to throw together and, if you can spare a little time early in the week, you will have something to throw together for quick meals when life is busy. I love this recipe because (a) it’s delicious (b) it’s a great source of lean protein AND veggies and (c) it can be used in a variety of recipes throughout the week to keep things interesting!
Hey there! It’s been a busy couple of weeks over here. I’m getting fully back into the swing of seeing athletes, writing, presenting, and planning programs plus everything that goes along with being a wife and new mom. It’s exciting and crazy all at the same time.
Hi friends! Today I am suuuuper excited to share with you this new breakfast creation! As some of you know I’m officially back to work - full time dietitian and full time mom. I love it all but must say it’s a LOT, and I have found that I need an even more efficient plan for the week than ever in order to get me and baby girl out the door in the morning, dressed, fed and bags packed. When it comes to breakfast these days, I am a fan of oatmeal but regular instant oatmeal does not stick with me for very long. For that reason I recently started experimenting with some overnight oats recipes. I have made a couple that I really like in the past (linked here and here), but
