Hi friends! Today I am suuuuper excited to share with you this new breakfast creation! As some of you know I’m officially back to work - full time dietitian and full time mom. I love it all but must say it’s a LOT, and I have found that I need an even more efficient plan for the week than ever in order to get me and baby girl out the door in the morning, dressed, fed and bags packed. When it comes to breakfast these days, I am a fan of oatmeal but regular instant oatmeal does not stick with me for very long. For that reason I recently started experimenting with some overnight oats recipes. I have made a couple that I really like in the past (linked here and here), but I wanted something new and a little heartier. I’m currently nursing so my calorie needs are even more elevated than when I was pregnant and, being busier than ever, it’s hard to find time to get the needed snacks so I try to make some of my meals more energy and nutient-dense (more bang for your buck, if you will).
In thinking through this new overnight oats recipe, I came across a new sunflower seed butter by 88 Acres. I don’t usually pick flavored nut or seed butters but this peaked my interest and I thought, “I could use this to spice up my standard overnight oats!”. I was intrigued by this flavor because I always feel like my recipes could use just a little more vanilla. This could add that deeper richer vanilla flavor, a little spice and add quality nutrition to my recipe! So I purchased the sunflower seed butter and started experimenting at home. It took several attempts but I finally came up with the perfect proportion of ingredients. It’s DELISH and filling and I can’t wait to share it with you! I simply combine everything in a container with a lid the night before, store it in the fridge overnight and it’s ready to go the next morning (or the next)!
And for those athletes out there…
This is absolutely a great option for the busy athlete! It would make a great breakfast (post exercise) or a great snack for those needing to further optimize their nutrition. It’s a great source of quality carbohydrates for energy, healthy fats for vitamin absorption, to fight inflammation, and provide more energy, protein to help build and repair tissues, and micronutrients like iron, magnesium and zinc. You can enjoy this at home before school, grab from the fridge and enjoy on the way to school, pack it in a lunchbox with a cold pack and enjoy it after morning practice before school starts, OR enjoy as a post-game meal #2 for those evening games with early dinners.
These overnight oats are so creamy and flavor-packed with a hint of sweet and a pinch of spice. I hope this gives you one more easy breakfast to add to your go-to list!

Blueberry vanilla spice overnight oats
Serves 1
INGREDEINTS:
1/2 cup uncooked rolled oats
1/2 cup 1% milk
2 tablespoons 88 Acres vanilla spice sunflower seed butter
1 teaspoon honey + additional if desired
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/4 cup frozen blueberries
Pinch of salt
Additional sunflower seed butter and honey, if desired
DIRECTIONS:
In a small container with a lid add the oats, milk, pumpkin seed butter, honey, vanilla and cinnamon and stir everything together until well combined.
Add in the blueberries and a pinch of salt (no more than 1/8 teaspoon) and stir again until blueberries are well incorporated into the oat mixture.
Cover container with airtight lid and let sit overnight in the refrigerator
Pull out of refrigerator in the morning, add a drizzle more of honey and / or pumpkin seed butter, if desired, stir and enjoy!
