The other night we made these salmon tacos and I knew I had to post them on my blog. I discovered this recipe a few years ago, actually, and this easy-to-throw-together meal has been a hit in our home and with guests. The four-ingredient slaw is easy to assemble the day before or morning of when you have about 5 minutes. That means when it’s time for dinner all you have to do is mix the 3-ingredient spice rub, (which I loved so much a made a separate post here) mash your avocado, and throw together a side or two, if you want them, while the salmon cooks in the oven. Easy cooking AND easy cleanup!
Blueberry Blast Overnight Oats
You guys know by now I love my oatmeal and overnight oats. I’m moving more towards the hot oatmeal these chillier mornings, but I’ve got one more overnight oats recipe for you today. The great thing is that these recipes can be taken out of the fridge in the morning and quickly reheated for a deliciously warm, satisfying and fueling breakfast. The athlete could also take this to practice cold and then eat right after practice cold or heat it up if he/she has access to a microwave. Perfect!
Garden Split Pea Soup
Happy almost Thanksgiving! I hope everyone is staying safe and healthy. Today I wanted to share with you one of my favorite easy homemade soups. It’s warm and savory and packed with nutrition. It’s perfect for this time of year! I love making a batch of this and having it on-hand for lunches and dinners during the week. It has so much flavor, AND it’s one of those recipes where the longer it sits in the fridge, the more flavor it seems to get! You can also freeze this soup to reheat when you want it at a later time!
